From the automotive industry to running a chain of restaurants in two countries.
From Toyama, some 400 km south of Tokyo, to Kolkata.
Unassuming yet friendly, chatty but reticent about talking business, #PalashBanerjee owns and runs Aajisai, the Japanese fine dining restaurant at the Quest Mall in Kolkata. That’s not all, he runs among a few others Fuji in New Delhi and Chennai, respectively.
Brought up in the Land of the Rising Sun, Palash has also taken Bengali cuisine to that country at Kyushu and Nagoya named ‘Ganga’ and ‘Spice Factory’ since 2017, and come January 2023 the Japanese will be able to tuck into rice made delish with steaming momos, may be a topping of bhetki or ilessh (hilsa) bhappa (steamed), and even an aloo-posto (potatoes cooked with poppy seeds), or deem’er torkaari (egg curry) with luchee (maida puri), and oh! some naarikol mishti (coconut sweetmeats) too. The cooks have been flown down to Hiroshima from the Bardhaman Raajbari to be able to serve authentic Bengali cuisine.
